Here’s a tasty little vegetarian dish that you can whip up in less than 30 minutes. ┬áReally, we were surprised at the yumminess!

6 oz. uncooked linguine
2 medium zucchini, sliced
1/2 lb. mushrooms, sliced
2 green onions, chopped
1 garlic clove, minced
2 tbs. butter
1 tbs. olive oil
1 large tomato, chopped
2 tsp. minced fresh basil
1/2 tsp. salt
1/4 tsp. pepper
4 oz. shredded Italian cheese mix
3tbs. shredded Parmesan cheese

1. Cook linguine according to package directions.
2. Meanwhile, in a large skillet, saute zucchini, mushrooms, green onions and garlic in butter and olive oil 3-5 minutes. Add tomato, basil, salt and pepper – simmer for 3 minutes.
3. Drain linguine. Add to vegetable mixture. Sprinkle with cheese and toss to coat.
